If you have a device jailbroken on iOS 5.1, you have a tethered jailbreak, and you need to use redsn0w to boot tethered every time the device reboots, or else you'll get a seemingly unjailbroken device where Cydia doesn't work. Just plug in your device, open up redsn0w, click "Extras", and then click "Just boot".

When ever i do open up RedSn0w, and then Just Boot, my device still wont go into DFU Mode (powering off then pressing next doent either).

Make sure you have the latest version of iTunes installed on your computer, make sure you're plugging your device directly into your computer (not using a USB hub), and follow these steps to set up redsn0w for best results. Let's keep further comments and details in your main question for this.
