Pangu provides an iOS 9.0 untethered jailbreak. TaiG provides an iOS 8.4 and 8.3 untethered jailbreak.

You can use Cydia Impactor if you need to un-jailbreak an 8.1-8.4 device without restoring.

How to fix some mysterious problems.

I would like to view the images and source of certain themes, but I cannot find where Cydia installs the theme files.

It's better to look under /Library/Themes/ - that's the official filepath (see The "/var/stash/" path basically means the same thing in the case of jailbreaks like redsn0w, but it won't be useful to a user who jailbroken with JailbreakMe.

Related: using winscp if I click on the symlink /Applications, it is half the time pointing to an invalid folder /private/var/stash/Applications.YYYYY instead of Applications.XXXXX - why?

Check Advanced Options / Environment / Directory / Resolve symbolic links is checked.

yeah, I've got that checked. What will happen is if I click Applications it goes to an invalid folder, then I can refresh the window and try again and it will work. I guess my question is why is it invalid the first time. That's probably a question for saurik since it is Cydia that stashes the stuff and creates the symlinks.

You can verify by using a (non-WinSCP) ssh session. I use Cygwin on Win 7. If it navigates without issues, it's a WinSCP configuration issue or bug.

It depends upon the package (app/theme/tweak, etc). Use Cydia/Manage/Packages. Select app, tweak, or theme. Files and their locations are listed in Filesystem Content.
