Just a curious george here, what firmware is apple still signing?

Wouldn't they just be signing the current one, 4.3.5?

Depends on what device you're asking about.

For iPod Touch 4G, iPhone 4, iPad and iPad2 they are signing for the latest official firmware (4.3.5/4.2.10) and iOS5 betas 1,2,3,4.

For iPod Touch 3G and iPhone 3GS they are signing for the latest official firmware (4.3.5) and iOS5 betas 1,2,3,4 and strangely iOS 4.1

For iPod Touch 2G and iPhone 3G iOS 4.2.1 and 4.1

Sorry the previous firmwares 4.3.4/4.2.9 are NOT being signed anymore.

Signing means which firmware that Apple is currently letting their iDevices be restored to. For example, try restoring your iPhone 4 to 4.2.1. Nope. won't happen. Apple isn't approving, or signing that firmware. You can only restore to 4.1 or 4.3.5. If you save your SHSH blobs, that means TU will "sign" the firmware, letting you restore to a non Apple signed firmware.

Definitley 4.3.5, but you might get lucky with 4.3.4 (don't know if the window is closed yet), but definitely not 4.3.3

The reason you might get lucky with 4.3.4 is that there always seems to be an overlap when newer firmware (4.3.5 in this case) is released, but this overlap doesn't last long, and usually, in a matter of days the opportunity of getting the older firmware (4.3.4 in this case) signed by Apple will of ceased.

Grr. Deleted my comment with iPhone... Anyway. No shsh with an ipad2 means no jailbreak. Not in the foreseeable..
