Pangu provides an iOS 9.0 untethered jailbreak. TaiG provides an iOS 8.4 and 8.3 untethered jailbreak.

You can use Cydia Impactor if you need to un-jailbreak an 8.1-8.4 device without restoring.

If you have ultrasn0w installed on your device in order to make calls, so yeah, you're unlock dependent.

As far as I know: if you have a provider from which you bought the iPhone and plan to use that same provider (T-mobile in your case, Vodafone in mine) after the JB, chances are you'll be fine... Personally I used TinyUmbrella during the update to 4.1 and after this I JB'd my iPhone. Worked well :)
