You must have changed something else in the file, or, installed something via cydia and that was the first reboot since installing it, coincidental timing. At any rate, I've done the above many times, on several different devices (the last time was a couple of hours ago) with absolutely no problems. Have you installed anything lately?

You can do that easily by editing a plist file. Look in /System/Library/CoreServices/ for a file named something like N72AP.plist (that's what it is on my iPod 4 but it varies by device). There will be a value in there called "device-name". Just change it from "iPod" to whatever you want, then reboot. If you don't see that value, it's the wrong plist file (there are several, similarly-named).

For the record, directly editing the device-name field in the N72AP.plist file is generally a bad idea. This device-name value is used for multiple purposes within the system, including as part of your User Agent string when you're browsing the web (which is a piece of information logged on the servers of the website you're visiting). So, if you type your name into this .plist in order to show your name on the top-left of your device, your name will also show up in the logs of every website you visit with Mobile Safari.

It's better to use a carrier tweak that does not modify N72AP.plist at all. FakeCarrier does this safely (according to my quick test of it) and seems to work on most devices.
