Pangu provides an iOS 9.0 untethered jailbreak. TaiG provides an iOS 8.4 and 8.3 untethered jailbreak.

You can use Cydia Impactor if you need to un-jailbreak an 8.1-8.4 device without restoring.

How to fix some mysterious problems.

Why can't the erase all content be used when ios device is jailbroken, but you can restore using itunes? Why can't I do that from the settings? All I keep hearing is it hangs! Why?

Here is the technical reason, because a jailbreak reorganises the files after a jailbreak, a reset on the device it's self gets lost when looking for the files in the place it used to be, causing a bootloop . A restore via iTunes reinstalls the entire OS which is different than simply cleaning and resetting it. Hope that clarifies.

While do the files get lost? Did jailbreak team do this? Did they purposely do this?

Erase all content and settings will put you in a boot loop while jailbroken.That's why it is disabled automatically when you jailbreak

A restore in iTunes is needed to fully get rid of a jailbreak

Like I said, using it would put you in a boot loop,thats why it is disabled

@King Shoot Jailbreaking does not disable "erase all" automatically. It can be disabled by installing a jailbreak tweak.
