Too much to try and explain, this calls for a bit of self help, so go here and scroll down to Jailbreak Software and have a good read, then if you still need to ask questions post back.

iPod 3G eh? Well, redsn0w is a little more stable than greenpois0n, but it lags a bit more and I've found crashes more. Sn0wbreeze provides no benefit because you're not an iPhone user(it's meant to be used as a pwnagetool replacement thing.) and greenpois0n gives you animated bootlogos.

redsn0w and greenpois0n are similar. sn0wbreeze creates custom (jailbroken) IPSW's :)
