iOS 8.3, 8.2, and iOS 8.1.3 are not jailbreakable. There is no way to downgrade from iOS 8.3, 8.2, or 8.1.3 to earlier versions.

I'm currently on iphone 5 6.0. If I jailbreak and something goes wrong and I have to restore, can I restore back to 6.0?

For A5, A5X, and A6 devices, there is no publicly known exploit to the bootloader. As such, you can only install the currently distributed version of iOS from Apple. Since iOS 6.0 is no longer being signed by Apple, you cannot re-install it.

It's better if you install iOS 6.1 as it is the best available firmware for iPhone 5 with an untethered jailbreak available.
