Pangu provides an iOS 9.0 untethered jailbreak. TaiG provides an iOS 8.4 and 8.3 untethered jailbreak.
Check @PanguTeam, @taig_jailbreak, @saurik, and /r/jailbreak for news and updates.
You can use Cydia Impactor if you need to un-jailbreak an 8.1-8.4 device without restoring.

my iPod 5th gen is running ios 6.1 i was just wondering if i could update it to like 6.2 (when it comes out) after i jailbreak it

Not if you still want it to be jailbroken.

If jailbreak is important to you, always wait until jailbreak method is known, before installing a new version of iOS.

You can, but you will lose the Jailbreak if you update
