How to fix some mysterious problems.

Hi, I'm with the iPhone Backup Extractor team at Reincubate, we deal with iTunes backups all the time and we have helped many users with issues such as yours. As justinred mentioned, it's not possible to restore from an iOS6 backup to iOS 5.1.1. Also, I'm afraid making an iCloud backup will not help you, the problem still remains.

What you can do though is extract the data you need from your iOS 6 backup and then get it back to your iPhone. If you tell me what kind of data you are interested in getting back to the phone (contacts, sms, photos, notes, etc), maybe I can help guide you. Contacts extracted as CSV files from an iTunes backup, for example, can be easily imported into Outlook or Gmail.

Do let me know if I can be of help!

Unfortunately you can't use newer backups on older firmwares. What you can do is to configure manually your phone again with iCloud to restore certain data (contacts, calendars, etc.), but you'll have to reinstall apps manually (and you will lost some data, like SMS and stuff like that). It would be better for you to stay in iOS 6.x and wait for the jailbreak.
