Pangu provides an iOS 9.0 untethered jailbreak. TaiG provides an iOS 8.4 and 8.3 untethered jailbreak.

You can use Cydia Impactor if you need to un-jailbreak an 8.1-8.4 device without restoring.

How to fix some mysterious problems.

I have an iPhone 4s IOS 5 and it's jailbroke, but I would really love to update to the IOS 6. So I was wondering if it's safe to go ahead and update and lose my jailbreak, but then go and jailbreak it again with the new IOS 6 jailbreak???

Yes it is. Although there is no way to jailbreak on 6.x yet. If you do want to update, just click restore in iTunes.

Not on the 4S. Should be soon after 6.1.

No, not on an iPhone 4S. See the line up top there that says People to follow for news on iOS 6 jailbreaking:
If you update to iOS 6, you will lose your jailbreak, and you cannot downgrade to iOS 5.
