You can use Cydia Impactor if you need to un-jailbreak an 8.1-8.4 device without restoring.

I only updated iTunes a week ago, I assume to iOS 6.0.1. Can I still use the tethered jailbreak?

I'm sorry, it's an iPhone 3gs. I updated the iOS to 6.0.1 and it got stuck on the activation screen. I managed to downgrade to iOS 4.1 and rejailbreak, but I lost my apps in the process.
