evasi0n7 can jailbreak iOS 7.0-7.0.6 untethered. p0sixspwn can jailbreak iOS 6.1.3-6.1.5 untethered (see here for 6.1.6).
How to jailbreak iOS 7.0-7.0.6 (and fix problems). iOS 7.1.x is not jailbreakable, except an unsupported tethered iPhone 4 jailbreak.
Restoring or updating will update your device to iOS 7.1.1 and remove your jailbreak. There is no way to downgrade from iOS 7.1.x to 7.0.x.

What are some tweaks to make keyboard clicks a different sound?

Unfortunately, ToneFXs 2 (Pro), which can customise your keyboard sound, can't be installed on iOS 5 as it's not known whether it's compatible.
You can however, change the sound yourself by doing the following:

  1. Download and run i-FunBox for your computer operating system.
  2. Open Raw File System under your device name in the left hand frame.
  3. Navigate to /System/Library/Audio/UISounds/ and backup Tock.caf to your computer.
  4. Delete Tock.caf from your device or rename it to something like Tock.bak
  5. Rename the sound file you want to replace it with to Tock.caf and transfer the new file from your computer to your device.
  6. Reboot.

You can also accomplish this by making a Winterboard theme to "replace" the default Tock.caf file with a custom file. This has the advantage of not directly replacing any files on disk, just applying a theme, so it's easier to uninstall and reinstall. I just tried searching for this, and there are a few already in Cydia (in the section Themes (Sounds)), including the following ones. I don't know if they're compatible with the filenames in iOS 5, but they might be interesting to look into:

  • AK47 Keyboard Sound
  • Carbine Keyboard Clicks
  • Cartoon Hammer Keyboard Click Sound
  • Typewriter Keyboard Sound
  • Keyboard Typing Fart Tone

It looks like iSounds may be able to help you change this sound. It's a free tweak, so you can try it out and see if it does (I'm not sure).

Unfortunately, iSounds will only theme Phone button press sound.
